Chicken burrito for lunch is really tasty! The leftovers save me time and money. Goal of 30 grams carb for a 1200 calorie diet...although typically only "count carbs" and not calories on this diet.


Sausage = 0 carbs, 80 calories, 5 g pro; 1 egg fried in olive oil = 0 carbs, 100 calories, 7 g pro; 1 slice lite wwht bread = 5 carbs, 35 calories, 2.5 g pro, 2.5 g fiber
Snack: 1/4 cup dry roasted peanuts = 3 g carbs, 80 calories, 3.5 g pro

"March lillies" are blooming in February this year and these are about a 15 minute walk from my house. I like to walk for 20 to 30 minutes and went walking about 1/2 hour after eating morning carbs. Carbohydrates are important fuel for physical activity. A low carb of a keto diet can leave you struggling to do physical exercise or work for any length of time.


Baked chicken (3 ozs) with breading removed to remove carbs = 0 carbs, 210 calories, 21 g pro; cabbage, carrots and romaine lettuce 1/2 cup = 2 g carbs, 1 tbsp ranch dressing made with yogurt = 0 carbs, 30 calories. 2 tbsp shredded reduced fat cheese = 0 carbs, 40 calories, 3.5 g pro, xtreme wrap = 4 g net carbs, 50 calories, 5 g pro, 11 g fiber (6 carbs)
Snack: 1 tbsp peanut butter = 2.5 carbs, 90 calories, 3.5 g pro; 11 oyster crackers = 3 carbs, 25 calories (5.5 carbs)


Tilapia fried with bacon with taco seasoning, parsley, dill, garlic, salt and pepper (this was melt in my mouth good) = 0 carbs since no breading, 220 calories, 21 g pro; 1 slice bacon = 0 carbs, 45 calories; 2.5 g pro; 1/2 cup slaw = 3 carbs, 60 calories; asparagus = 5 carbs, 45 calories; keto hushpuppies = 0 carbs, 200 calories; 1 tsp grape jelly = 4 g carbs, 20 calories
Fish could be "breaded" with finely crushed nuts or pork rinds or a nut flour... The hush puppies are made with parmesan cheese... see recipe added later.

BBQ pork rinds = 0 carbs, 140 calories
When you first start a low carb or keto diet, you will see almost immediate (within 2 days) weight loss of 1 to several pounds. This is due to water loss. Water is stored with carbohydrate (glycogen) and when on a low carb or a keto diet, those carb stores are used up quickly and the water is then excreted from the body. I have been thirsty while on this diet - probably from eating the bbq pork rinds - will need to cut down on these:-)
(21.5 g carbs, 1470 calories = Goal of 30 grams carbs) Typically the calories are low when on a keto or low carb diet since carbohydrate foods like breads and starchy vegetables contribute 50% or more of the calories. The calories today increased due to higher fat from cooking meats in fat and also from special low carb foods such as the keto hushpuppies and the bbq pork rinds (which have always been zero carb).
